"Yield and recovery data are important decision-making tools for many people in the seafood industry. This publication is a compilation of recovery and yield data from scientific sources and industry experience. Recoveries are reported as averages and expected ranges. The average yield represents high quality, properly handled fresh fish and shellfish in good physiological condition. Many other factors will also affect yields. Filleting skills, cooking times, and refrigeration systems can all have an effect on recoveries.
