In this proyect, the microbiota of diverse vinegars was characterized by using 16S rRNA Amplicon Sequencing throughout the course of three acetification processes of alcoholic raw materials: alcohol wine, fine wine, and craft beer media. The study and comparison of the biodiversity of different vinegars may contribute to improving the understanding of the microbial communities' role in the vinegar-making industry.

本研究采用16S rRNA扩增子测序(16S rRNA Amplicon Sequencing)技术,对食用酒精酒液、精品葡萄酒与精酿啤酒基质这三种酒精原料的三次乙酸发酵全过程中不同食醋的微生物群进行了表征。对不同食醋的生物多样性开展研究并进行对比,有助于加深对食醋酿造产业中微生物群落作用的理解。
