Purified recombinant sorbose dehydrogenase from <i>Sinorhizobium</i> sp. 97507 exhibited high reactivity for 1,5-anhydro-d-glucitol (1,5-AG) and l-sorbose, but little activity for the other sugars or sugar alcohols tested. Kinetic analysis revealed that its catalytic efficiency (<i>k</i><sub>cat</sub><i>/K</i><sub>m</sub>) for l-sorbose and 1,5-AG is 1.8 × 10<sup>2</sup> and 1.5 × 10<sup>2</sup> s<sup>−1</sup>·M<sup>−1</sup>, respectively.

从中华根瘤菌(Sinorhizobium)菌株97507中纯化得到的重组山梨糖脱氢酶,对1,5-脱水-d-葡萄糖醇(1,5-anhydro-d-glucitol, 1,5-AG)与L-山梨糖表现出高催化活性,但对其余受试糖类及糖醇类物质仅具有极微弱的催化活性。动力学分析结果显示,该酶针对L-山梨糖和1,5-脱水-d-葡萄糖醇的催化效率(k_cat/K_m)分别为1.8×10² s⁻¹·M⁻¹和1.5×10² s⁻¹·M⁻¹。
