Red beans (Phaseolus vulgaris) are gaining recognition for their potential in functional foods and nutraceuticals. This study isolated bioactive peptides under 3 kDa from red bean protein hydrolysate, generated by pepsin digestion and purified using sequential cation exchange, anion exchange, and reverse-phase chromatography. The resulting hydrolysate exhibited anticancer activity.
红小豆(Phaseolus vulgaris)因其在功能食品与营养保健品领域的应用潜力而日益受到重视。本研究从经胃蛋白酶酶解制备的红小豆蛋白水解物中分离得到分子量低于3 kDa的生物活性肽,并通过依次联用阳离子交换、阴离子交换与反相色谱的方式完成纯化。所得水解物表现出抗癌活性。
