High-carbohydrate diet (HCD) is a significant nutritional factor inducing metabolic dysfunction-associated steatotic liver disease (MASLD). The core mechanism involves metabolic dysregulation and cellular damage triggered by reactive oxygen species (ROS) burst, although the specific molecular mechanisms remain to be elucidated. Modeled on the carnivorous fish Micropterus salmoides, a species with extreme carbohydrate intolerance, this study investigates how ROS burst drives the progression of HCD-induced liver damage.
