The information about the morphology of colloidal systems plays an essential role in controlling the biological fate and bioavailability of cargo loaded systems in the gastrointestinal tract. Recently there has been interest in the incorporation of bile salts (BSs) into phospholipid vesicles to enhance the bioavailability of phytochemicals with the modification of the structure. BSs containing systems are already utilized in the pharmaceutical industry as a delivery vehicles, however, they have not been employed for the encapsulation of phytochemicals in the food industry.Resveratrol (as a model phytochemical) loaded phospholipid/BSs system will be used to investigate structures and interactions, controlling the fate of the system in the gastrointestinal tract, and explore the adaptability of the system into the food formulations.
胶体系统(colloidal systems)的形态学信息对于控制负载型载体系统在胃肠道中的生物学命运及生物利用度至关重要。近年来,人们开始关注将胆汁盐(bile salts, BSs)掺入磷脂囊泡(phospholipid vesicles)中,通过结构修饰提高植物化学物(phytochemicals)的生物利用度。含BSs的系统已在制药行业用作递送载体(delivery vehicles),但尚未应用于食品行业的植物化学物包封。本研究将采用负载白藜芦醇(resveratrol,作为模型植物化学物)的磷脂/BSs系统,探究其结构与相互作用、系统在胃肠道中的命运调控机制,并探索该系统在食品配方中的适应性。
