Dataset S1 for: Spray application of fruit powder formulations as a processing strategy to mitigate CML and CEL formation in charcoal-grilled pork

Source data for all figures and tables in the accompanying manuscript submitted to LWT – Food Science and Technology. The dataset contains 13 sheets: (S1) eight-fruit antioxidant screening, (S2) four-powder characterization with sugar composition and antioxidant-to-glucose ratios, (S3) guava powder dose-response, (S4) CML/CEL content by application method with individual replicates, (S5) two-way ANOVA variance decomposition, (S6) TBARS for all three application methods, (S7) CML/CEL for BBQ sauce treatments, (S8) Pearson correlation matrix, (S9) consumer acceptance sensory scores, (S10) accelerated storage stability data (color, TFC, AGE inhibition, TBARS, triangle test), (S11) molecular docking results for 28 polyphenols and 3 AGE precursors against porcine myosin glycation hotspots, and (S12) MGO trapping capacity with docking binding energies.
