<b>Assessment of the exposure to cytotoxic</b><b> </b><b><i>Bacillus cereus</i></b><b> </b><b>group genotypes through HTST milk consumption</b>Cytotoxic <i>Bacillus cereus</i> group strains are common causes of foodborne illness. This study modeled the growth of cytotoxic <i>B. cereus</i> group strains in HTST milk along a supply chain and developed an exposure assessment model that can predict the cytotoxic <i>B. cereus</i> group concentrations at the point of human consumption. This model represents a tool that can help the industry assess likely human exposure to cytotoxic <i>B. cereus</i><i> </i>group strains if HTST milk is found to be contaminated with a given <i>B. cereus</i><i> </i>group genotype at a given level, thus facilitating food safety management decisions.

通过高温短时杀菌乳消费评估细胞毒性蜡样芽孢杆菌(Bacillus cereus)群基因型的暴露风险 细胞毒性蜡样芽孢杆菌群菌株是食源性疾病的常见致病源。本研究沿供应链建模分析了细胞毒性蜡样芽孢杆菌群菌株在高温短时杀菌(High Temperature Short Time, HTST)乳中的生长动态,并构建了可预测人类消费时点该菌群浓度的暴露评估模型。该模型可作为实用工具,当某一特定水平的特定蜡样芽孢杆菌群基因型污染高温短时杀菌乳时,可帮助食品行业评估人类对细胞毒性该菌群菌株的潜在暴露风险,进而助力食品安全管理决策制定。
