Yuba, a protein and lipid rich soybean product, is highly susceptible to spoilage during storage, limiting its shelf life and marketability. This study employed an integrated approach combining 16S rRNA gene sequencing and UPLC-MS/MS untargeted metabolomics to explore the dynamic interactions between shifts in the microbial community and alterations in the metabolite profile of yuba during ambient storage. The investigation covered four different storage durations: 7 days, 50 days, 105 days, and 460 days.
腐竹(Yuba)作为一种富含蛋白质与脂质的大豆制品,在储存过程中极易发生腐败变质,进而限制其货架期与市场推广价值。本研究采用结合16S rRNA基因测序与超高效液相色谱-串联质谱(UPLC-MS/MS)非靶向代谢组学的一体化分析方法,探究常温储存过程中腐竹微生物群落结构偏移与代谢物谱改变之间的动态互作关系。本次研究设置了4个不同的储存时长:7天、50天、105天与460天。
