This dataset contain the composition and physical properties of aqueous solutions of fructo-oligosaccharides produced as part of the PREMIUM project, compared to reference solutions currently used to protect bacteria. The physical properties measured are: the glass transition temperatures, the viscosity at 4°C and 20°C, the osmolality and the ice nucleation temperature.
本数据集包含作为PREMIUM项目一部分制备的低聚果糖(fructo-oligosaccharides)水溶液的组成及物理性质,并与目前用于保护细菌的参考溶液进行了对比。所测量的物理性质包括:玻璃化转变温度、4°C及20°C下的黏度、渗透压摩尔浓度以及冰核形成温度。
