Twenty one representative strains of lactic acid bacteria isolated from bryndza cheese were selected and submitted for comparative genomics. The aim was to genetically characterise the lactic acid bacteria strains in order to use them in mixed starter cultures for bryndza cheese manufacture.
从布林扎奶酪(Bryndza Cheese)中分离得到的21株代表性乳酸菌(Lactic Acid Bacteria)菌株被筛选选出,并提交进行比较基因组学分析。本研究旨在对上述乳酸菌菌株进行遗传特征表征,以期将其应用于布林扎奶酪生产所需的混合发酵剂体系中。
