Leuconostoc mesenteroides subsp. dextranicum cold-temperature EPS producer strains

The strains were isolated as spoilage from commercial meat sausages with slimy defects on it, to understand the fundamentals of their EPS production capacity in different industrial conditions, and the application of this knowledge in food safety and protection. It has industrial and ecological implications.
