Here Maitre d' Tommy Maruca, foreground, business suit, checks on busy chefs who can turn up almost any delicacy on a moment's notice. 28/29: Unseen voice behind public address system here is Jackie Tracy, who shares duties with six other girls, around the clock. All must speak English, spanish and French to qualify for work; never 'ad lib'.
