BEVOG – Old Apple Varieties for Juice Production

As part of the 'Description of Fruit Genetic Resources' Project (BEVOG, NAP 03-21), over 450 single-variety apple juices were produced between 2007 and 2010. The project contractor was FRUCTUS and the work was carried out at Agroscope in Wädenswil. The juice samples were chemically and sensorially analysed to determine inter alia glucose, fructose, sucrose and sorbitol content, antioxidant potential and titratable acidity. For the sensory description, the juice samples were assessed using the 20-point scheme in common use internationally.
