1、数据采集:确定泡椒保鲜所需保鲜液成分,如:保鲜添加液参数,保鲜腌制液参数和制作腌制液参数等;以及泡椒保鲜基础工艺步骤,如清洗、沥干、浸泡、保藏温度等。 2、数据处理:根据所确定的保鲜液成分和基础工艺步骤,进行多组泡椒保鲜试验,记录各对照组的试验数据,经数据统计分析及泡椒保鲜效果判定,获取泡椒的保鲜工艺数据集,包括;原材料关键参数、处理步骤参数、保存核心操作、保藏环境参数。 3、数据应用:可用于泡椒食品企业的生产研发环节,提高泡椒的保鲜效果,延长泡椒保质期限,降低储存成本,提高泡椒品质,且可为新泡椒产品的研发提供数据支持,降低研发成本,提高研发效率。

Data Collection: Determine the components of the preservation solution required for pickled pepper preservation, including parameters of preservation additive solutions, pickling preservation solutions, and pickling solution preparation parameters, as well as the basic technological steps for pickled pepper preservation, such as cleaning, draining, soaking, and storage temperature, etc. 2. Data Processing: Conduct multiple sets of pickled pepper preservation experiments based on the confirmed preservation solution components and basic technological steps, record the experimental data of each control group. Through statistical data analysis and preservation effect evaluation of pickled peppers, obtain the pickled pepper preservation process dataset, which includes key raw material parameters, processing step parameters, core storage operations, and storage environment parameters. 3. Data Application: This dataset can be applied to the production and R&D links of pickled pepper food enterprises, to improve the preservation effect of pickled peppers, extend their shelf life, reduce storage costs, and enhance the quality of pickled peppers. It can also provide data support for the R&D of new pickled pepper products, reducing R&D costs and improving R&D efficiency.
