针对茶油加工产业的现状和存在的质量安全问题,从原料采后处理、制油方式、精炼投入物控制、饼粕和茶油贮藏及茶油质量安全状况分析等方面开展了茶油加工全过程危害点分析和质量安全控制技术研究,在此基础上提出相应的控制措施,确定了有机茶油加工质量关键控制点和控制技术体系 建立有机茶油原料生产基地和示范生产线,开展加工企业有机化管理技术体系和模式示范,以此推动茶油加工产业整体质量安全水平的提高和技术的进步。 1.油茶果采收及采后处理 通过定点分时采样和同批油茶籽不同处理对比试验,揭示了原料采收时间、采后处理方式对茶油品质及质量安全的影响规律,确定了浙江及相似气候区油茶果适宜的采收期和采后处理技术措施——十月末采收、采后及时脱粒烘干处理。并在4家企业生产应用,为优质茶油加工提供了原料品质控制和生产技术。 2.加工方式对茶油品质及质量安全风险分析 通过产地和企业取样调研和不同的试验设计,研究了加工方式(油茶籽脱壳/不脱壳、热榨/冷榨、压榨/浸出等)和加工过程对茶油品质及苯并芘、黄曲霉毒素、重金属等质量安全指标的影响,评估了不同处理方式和加工工艺茶油营养成分保留效的优劣及质量安全风险,确定了加工过程中的采收、采后处理、制油方式、精炼过程、加工贮藏条件、投入品等环节中的11个关键危害因子,并提出了相应的控制措施,为改变小型加工企业管理不规范,质量风险大的状况提供了有效的质量管理模式。 3.有机茶油生产质量控制体系的建立及应用示范 根据目前茶油加工企业规模小,质量安全管理不规范的特点,建立了适合于小型茶油加工企业的生产全过程的有机食品及HACCP管理体系,包括质量管理手册、程序文件、生产技术规程、管理制度及关键性技术标准的制定及体系,并在相关企业运行示范,在4家企业建立了有机茶油质量管理体系并应用于生产管理。
Aiming at the current status and existing quality and safety issues of the camellia oil processing industry, this study conducted hazard point analysis and quality and safety control technology research across the entire camellia oil processing chain, covering post-harvest treatment of raw materials, oil production methods, control of refining inputs, storage of press cake and camellia oil, and analysis of camellia oil quality and safety status. Based on the research results, corresponding control measures were proposed, and the key quality control points and control technology system for organic camellia oil processing were identified. Organic camellia oil raw material production bases and demonstration production lines were established, and demonstrations of the organic management technology system and model for processing enterprises were carried out, so as to promote the overall improvement of quality and safety level and technological progress of the camellia oil processing industry.
1. Harvest and Post-Harvest Treatment of Camellia Fruits
Through fixed-point timed sampling and comparative experiments with different treatments of the same batch of camellia seeds, the influence rules of raw material harvest time and post-harvest treatment methods on camellia oil quality and quality safety were revealed. The suitable harvest period and post-harvest treatment technical measures for camellia fruits in Zhejiang and similar climate zones were determined: harvesting at the end of October, followed by timely threshing and drying treatment. These measures were applied in four enterprises, providing raw material quality control and production technologies for high-quality camellia oil processing.
2. Analysis of the Impact of Processing Methods on Camellia Oil Quality and Quality and Safety Risks
Through field and enterprise sampling surveys and different experimental designs, the impacts of processing methods (dehulled/undeheulled camellia seeds, hot pressing/cold pressing, pressing/extraction, etc.) and processing procedures on camellia oil quality and quality and safety indicators such as benzo(a)pyrene, aflatoxins, and heavy metals were studied. The pros and cons of nutrient retention in camellia oil and the quality and safety risks of different treatment methods and processing technologies were evaluated. Eleven key hazard factors in the processing links including harvest, post-harvest treatment, oil production methods, refining processes, processing and storage conditions, and inputs were identified, and corresponding control measures were proposed. This provides an effective quality management model for addressing the issues of non-standard management and high quality safety risks in small-scale processing enterprises.
3. Establishment and Application Demonstration of Organic Camellia Oil Production Quality Control System
According to the characteristics of small-scale operation and non-standard quality and safety management of current camellia oil processing enterprises, an organic food and HACCP management system covering the entire production process suitable for small-scale camellia oil processing enterprises was established, including the formulation of quality management manuals, procedure documents, production technical regulations, management systems, and key technical standards as well as the system framework. The system was demonstrated and operated in relevant enterprises, and organic camellia oil quality management systems were established in four enterprises and applied to production management.
