以可得然多糖为基材、丁香酚为活性物质制备生物基可降解包装膜,并探讨膜的物理性质和活性功能;采用包装膜接触果酱的迁移试验对丁香酚-可得然多糖包装膜的安全性进行评价,研究了膜中丁香酚向酸性食品模拟液中迁移的规律,并以迁移数据为基础,建立丁香酚在食品模拟物中的迁移模型;最后,根据丁香酚的气味特性,分别基于电子鼻/气相离子迁移谱开发了可得然多糖膜/果酱中丁香酚含量测定的方法数据。
Bio-based degradable packaging films were fabricated using curdlan as the substrate and eugenol as the active substance. The physical properties and active functions of the resulting films were investigated. The safety of eugenol-curdlan packaging films was evaluated via migration tests where the films were contacted with jam; the migration behavior of eugenol from the films into acidic food simulants was studied, and a migration model for eugenol in food simulants was established based on the collected migration data. Finally, based on the odor characteristics of eugenol, methods for determining eugenol content in curdlan films and jam were independently developed using electronic nose and gas-phase ion mobility spectrometry, along with the corresponding experimental dataset.
