深層海水因其富含營養鹽與礦物質的特性,已應用於具保健機能之微生物發酵生產,有利於多功效保健食品之開發;且藉由深層海水提升發酵效率,降低發酵成本,將大幅提升產品價值與其保健機能。過去研究中,已有利用深層海水於紅麴菌、牛樟芝、蛹蟲草、大蟬花與乳酸菌等機能微生物的生產。基於前人文獻研究基礎,深層海水應用於微生物發酵生產具有高度潛力,但目前相關微生物應用的文獻與資料庫尚未完整。本計畫將擴大發展深層海水在機能性微生物應用範圍,並利用蛋白質體代謝分析,提供生物技術產業在應用深層海水時,更能了解其發酵生產效益與基礎學理。匯集完整的資料庫可提供產業在發展深層海水之食品微生物應用時能方便快速運用。

Deep seawater, rich in nutrients and minerals, has been applied in the fermentation production of health-promoting microorganisms, facilitating the development of multi-functional health foods. Moreover, using deep seawater to improve fermentation efficiency and reduce fermentation costs will greatly enhance product value and its health-promoting effects. In previous studies, deep seawater has been utilized in the production of functional microorganisms such as *Monascus purpureus*, *Antrodia cinnamomea*, *Cordyceps militaris*, *Isaria cicadae*, and lactic acid bacteria. Based on existing literature, the application of deep seawater in microbial fermentation production has high potential, but current related literature and databases for microbial applications remain incomplete. This project will expand the scope of deep seawater applications in functional microorganisms, and use proteome metabolomic analysis to help the biotechnology industry better understand the fermentation production benefits and underlying mechanisms when applying deep seawater. Compiling a comprehensive database will enable the industry to conveniently and rapidly utilize resources when developing food microbial applications based on deep seawater.
