本数据集涵盖瘦型猪肉与整块带脂猪肉(包括肋排、里脊、肩肉、颈肉、腹肉及中心切猪排)在生食、水煮及烧烤三种状态下的维生素D₃(vitamin D₃)与25-羟基维生素D₃(25-hydroxyvitamin D₃,缩写25OHD₃)的含量数据。生猪肉块的总脂肪含量采用重量法测定。采用连接紫外二极管阵列检测器(UV-DAD)的反相高效液相色谱(reverse phase high performance liquid chromatography)完成定量分析:从蛋白质中纯化脂肪酸时使用C18固相萃取小柱(C18 cartridge),通过极性硅胶小柱(polar silica cartridge)分离维生素D₃与其代谢产物,再借助双氨基柱系列操作去除糖类杂质;将纯化后的提取物上样至C18固相萃取柱(C18 SPE column),以此实现维生素D₃与25-羟基维生素D₃的定量检测。烧烤样品的制备采用电热组合烤箱(electric combi oven)完成。
