Dataset on the content of vitamin D3 and 25-hydroxyvitamin D3 in 40 pork (Breitov breed) commodities

本数据集涵盖瘦型猪肉与整块带脂猪肉（包括肋排、里脊、肩肉、颈肉、腹肉及中心切猪排）在生食、水煮及烧烤三种状态下的维生素D₃（vitamin D₃）与25-羟基维生素D₃（25-hydroxyvitamin D₃，缩写25OHD₃）的含量数据。生猪肉块的总脂肪含量采用重量法测定。采用连接紫外二极管阵列检测器（UV-DAD）的反相高效液相色谱（reverse phase high performance liquid chromatography）完成定量分析：从蛋白质中纯化脂肪酸时使用C18固相萃取小柱（C18 cartridge），通过极性硅胶小柱（polar silica cartridge）分离维生素D₃与其代谢产物，再借助双氨基柱系列操作去除糖类杂质；将纯化后的提取物上样至C18固相萃取柱（C18 SPE column），以此实现维生素D₃与25-羟基维生素D₃的定量检测。烧烤样品的制备采用电热组合烤箱（electric combi oven）完成。
