Data including the characteristic flavor components of walnut oil were obtained using analytical techniques including Headspace Solid-Phase Microextraction (HS-SPME) coupled with Gas Chromatography-Mass Spectrometry (GC-MS) and Gas Chromatography-Olfactometry (GC-O) (abbreviated as HS-SPME-GC-MS/GC-O), as well as Odor Activity Value (OAV) analysis and other related analytical approaches. The data collection period spanned from January 1, 2021 to December 31, 2022.
