对于蒸烤箱产品来说,良好的温控性能在很多时候都决定了食物的成色、烘焙的成败以及蒸烤效率。蒸烤箱温控性能测试检验数据能够准确地发现蒸烤箱在温控上出现的问题,并及时解决和优化,同时保证蒸烤箱内部立体空间的加热均匀度,还能够细化温度调节方案,为全面性提升烘焙食物的品质、效率与成功率提供数据支持。蒸烤箱温控性能测试检验数据利用5个数据采集仪,将其中1个置于烤盘中心位置,其余4个分别置于距离烤盘边缘3cm*3cm的位置。选择设备设定温度,计时1小时检测出炉心平均温度、波峰平均值、波谷平均值。分别计算出平均温度的温差=设定温度-炉心平均温度,极限温度的温差=设定温度-波峰平均值,温幅=波峰平均值-波谷平均值。若同时满足平均温度的温差小于等于10K,极限温度的温差小于等于13K,温幅是否小于15K,则符合蒸烤箱的温控性能质量要求,温控性能合格;反之,则温控性能不合格,需要重新对设备进行检查和调节。(注:炉心平均温度、波峰平均值、波谷平均值单位为℃,平均温度的温差、极限温度的温差、温幅单位为K。)

For combi steam oven products, excellent temperature control performance often determines the final appearance of cooked food, the success rate of baking operations, and the overall steaming and baking efficiency. The test and inspection data of combi steam oven temperature control performance can accurately identify temperature control abnormalities in the equipment, enabling timely troubleshooting and optimization. Moreover, it ensures the heating uniformity of the three-dimensional internal space of the combi steam oven, refines temperature adjustment schemes, and provides data support for comprehensively improving the quality, efficiency, and success rate of baked foods. The temperature control performance test data collection employs 5 data acquisition instruments. One instrument is placed at the center of the baking tray, while the remaining four are placed at positions 3 cm × 3 cm away from the edge of the baking tray. Set the equipment to a preset temperature, and conduct a 1-hour test to record the average core temperature, average peak temperature, and average valley temperature within the test period. Calculate the following three indicators: 1. Average temperature difference = Preset temperature - Average core temperature 2. Limit temperature difference = Preset temperature - Average peak temperature 3. Temperature range = Average peak temperature - Average valley temperature If the following three conditions are simultaneously satisfied: the average temperature difference ≤ 10 K, the limit temperature difference ≤ 13 K, and the temperature range < 15 K, the temperature control performance meets the quality requirements and is deemed qualified; otherwise, the temperature control performance is unqualified, and the equipment needs to be re-inspected and adjusted. Note: The units of average core temperature, average peak temperature, and average valley temperature are ℃, while the units of average temperature difference, limit temperature difference, and temperature range are K.
