Processed metabolomics and multimodal analysis data for Lapsang Souchong black tea during decade-long storage

This dataset supports the manuscript entitled “Integrated sensory, chemical, metabolomic, and antioxidant profiling reveals coordinated quality transformation of Lapsang Souchong black tea during decade-long storage”. The dataset includes the processed widely targeted UPLC–MS/MS metabolomics matrix for 2,694 identified non-volatile metabolites across five representative production years of Lapsang Souchong black tea, with three biological replicates per year. It also includes supplementary tables containing FDR-controlled differential metabolite results, Spearman correlation results, multimodal data matrices, PLSR modeling outputs, VIP values, and composite storage score calculations. Analysis scripts used for Spearman correlation analysis, PLSR modeling and composite score calculation are also included.
