畜肉注水是存在已久的行业乱象,是食品安全聚焦点之一。根据食品安全法的要求,对菜市场肉类摊位开展抽样检测,并将检测数据对比: GB 18394-2001 《畜禽肉水分限量》,可得出该样品是否合格。该项数据可以辅助检测人员判断摊主是否存在畜肉注水的行为。1、样品来源:本项目抽检的畜禽肉全部来源于温峤菜市场主体经营的畜禽肉。
2.数据检测:样品经处理后,根据GB5009.268-2016红外线干燥法(快速法),得出数据。
3、数据判定:水分含量的计算,X=【(m1-m2)/(m1-m0)】*100。X为样品水分含量,单位为克每百克(g/100g);m0为干燥后称量器皿、细玻璃棒和砂的总质量,单位为克(g);m1为干燥前肉、称量器皿、细玻璃和砂的总质量,单位为克(g);m2为干燥后肉、称量器皿、细玻璃和砂的总质量,单位为克(g);100为单位换算系数。畜禽肉中水分含量标准要求根据 GB 18394-2001 《畜禽肉水分限量》判断是否合格,猪肉≤76、鸡肉≤77、牛肉≤77、羊肉≤78。
4、数据应用:通过抽检数据分析研判,我们可以判断畜禽肉中水分含量是否符合标准,避辅助检测人员判断摊主是否存在畜肉注水的行为。
Water injection in livestock meat is a long-standing industry malpractice and one of the focal points of food safety concerns. According to the requirements of the Food Safety Law, sampling inspections are carried out on meat stalls in markets, and whether the sample is qualified is determined by comparing the test data with GB 18394-2001 *Limits of Moisture in Livestock and Poultry Meat*. This data can assist inspectors in determining whether the stall owner has engaged in water injection of livestock meat.
1. Sample Source: All livestock and poultry meat sampled in this project comes from the livestock and poultry meat operated by the main vendors of Wenqiao Market.
2. Data Detection: After sample preparation, the data is obtained according to GB 5009.268-2016 Infrared Drying Method (Rapid Method).
3. Data Judgment: The moisture content is calculated as: X = [(m1 - m2)/(m1 - m0)] × 100. Where X is the moisture content of the sample, with the unit of grams per 100 grams (g/100g); m0 is the total mass of the weighing vessel, thin glass rod and sand after drying, in grams (g); m1 is the total mass of the meat, weighing vessel, thin glass rod and sand before drying, in grams (g); m2 is the total mass of the meat, weighing vessel, thin glass rod and sand after drying, in grams (g); 100 is the unit conversion factor. The qualification of livestock and poultry meat is judged according to GB 18394-2001 *Limits of Moisture in Livestock and Poultry Meat*, with the standard requirements: pork ≤76, chicken ≤77, beef ≤77, mutton ≤78.
4. Data Application: Through analysis and evaluation of the sampling inspection data, we can determine whether the moisture content of livestock and poultry meat meets the standards, and assist inspectors in judging whether the stall owner has engaged in water injection of livestock meat.
