The article examines, from a legal point of view, the main profiles, problems and perspectives of the so called Food Security and Food Safety in the actual complex and risk society. The paper builds on the relationship between Food Security/Safety and food diversity, in particular the one linked to agrobiodiversity and sustainable rural systems. Then it deals with the evolution of Food Security/Safety, as concept, purpose and system, to end with the analysis of the instruments and mechanisms of protection.
