Supply balance eggs

The data represent an overview of the supply balances of eggs. The total production of eggs for consumption and hatching eggs is the total production of eggs in Germany. For each year, usable production, export and import, domestic use, food consumption, self-sufficiency, consumption per head, stock of laying hens and laying capacity per hen are indicated.

In the case of import and export, there is still a distinction between shell eggs (in pieces or 1 000 tonnes) and egg products in shell egg value (for the conversion of egg products to shell egg value, a conversion key is used. The conversion is carried out on the assumption that 1 egg = 57.59 g.).

本数据集涵盖德国鸡蛋供应平衡概况。其中供食用鸡蛋与种用鸡蛋的总产量，即为德国境内的鸡蛋总产出。每年统计的指标包括可利用产量、进出口情况、国内使用量、食品消费量、自给率、人均消费量、蛋鸡存栏量以及单只蛋鸡产蛋能力。
在进出口统计中，仍需区分两类贸易品：带壳鸡蛋（shell eggs，按个数或千吨计量）以及以带壳鸡蛋当量计价的蛋制品（egg products in shell egg value）。针对蛋制品向带壳鸡蛋当量的转换，将采用专用转换系数，转换基准设定为1个鸡蛋对应57.59克。
