The objectives of this study were to (i) describe and compare the microbial composition of Cornerstone cheeses produced at three different facilities; (ii) characterize microbial colonization and succession throughout production and aging; and (iii) assess the impact of aging location on microbial composition using 16S bacterial and ITS fungal amplicon sequencing.
