In this study, carcass and beef quality traits of Holstein steers and bulls were biochemically assessed, following by RNA-seq of the longissimus dorsi (LD) muscle. RNA-seq revealed a total of 56 differentially expressed genes (DEGs) between Holstein steers and bulls. Through the integrated analysis of DEGs with gene ontology (GO), KEGG pathways, reported QTLs and SNPs, 5 novel promising candidate genes that affect beef quality of LD muscle resulting from castration were discovered.
