The metagenomes of three spontaneous fermentation processes, namely cocoa (Costa Rica), water kefir (Belgium), and rice vinegar (South Korea), were analyzed and served to perform a metagnomic binning to retrieve high-quality metagenome assembled genomes (MAGs). Those MAGs representing Saccharomyces cerevisiae genomes with enough quality in terms of completion and redundancy were recovered and are reported in this project.
