Increased awareness about the relation between food and health has resulted in the emergence of new term - "functional food". Functional food is a kind of food that can provide health benefits beyond those of basic nutrition. If fermentation was previously considered as a method of food preservation, fermented food is now considered as an important source of biologically active compounds. The goal of this project is to develop technologies for new fermented functional food products. For this, genomes of several microorganisms that can be used as starter cultures in fermentation was sequenced.
