Wineteractions - ITS yeast community exploration

Connecting the composition and function of industrial microbiomes is a major aspiration in microbial biotechnology. Here, we address this question in wine fermentations, a model system where the diversity of fermenting yeast species is determinant of the final flavor of wine as a model system. In this work we carried an observational study to assess the yeast microbiomes colonizing grape surface, coupled with experimental trials to identify functional yeasts associated with wine metabolite production under different fermentation conditions. This dataset correspond to the taxonomic exploration of yeast communities associated with grape berries, abd grape and synthetic must fermentations.
