Undefined milk starter cultures obtained from raw milk of nine different pasta filata cheese making plants. Milk was pasteurized (63° C, 15 min), and incubated at 42°C until a titratable acidity of 14-24°SH. Further batches were obtained by inoculating the culture from the previous cycle in milk (2% v/v).
