Biochemical compounds of 'Boufeggous' date palm cultivar subjected to prior convective and infrared drying and stored at two levels of relative humidity

This dataset provide numerical data for several physicochemical attributes and image features employed to evaluate the behavior of ‘Boufeggous’ cultivar dried using convective and infrared drying, and then stored at +4°C during 8 months at two levels of relative humidity: 55% and 65%.
