This dataset provide numerical data for several physicochemical attributes and image features employed to evaluate the behavior of ‘Boufeggous’ cultivar dried using convective and infrared drying, and then stored at +4°C during 8 months at two levels of relative humidity: 55% and 65%. For more comprehensive understanding of this dataset, please refer to the published paper entitled: "Impact of Prolonged Frozen Storage on ‘Mejhoul’ Date Palm Cultivar Based on Selected Qualitative Characteristics", DOI: https://doi.org/10.3390/foods14183189In total, 16 datasets based are given based on drying method, relative humidity level, and physicochemical compound.
