Yunnan stinky tofu is traditional Chinese fermented tofu products. This study investigated the flavor compounds and core functional microbiota of Yunnan fermented stinky tofu. A total of 12 fungal phyla and 201 fungal genera were detected, while a total of 59 bacterial phyla and 408 bacterial genera were detected.
