These sodium CSI MRI have been obtained on salted fish filets at several times after salting for salt mapping and diffusion assessment. MRI are virtual transversal slices of the filet. The value in each voxel is the NaCl content value in % (weight). This DataSet contains data corresponding to 16 filets. The tab 000_Filets_description.tab gives filets name, salting process (monolatéral means the salt have been applied on one side of the filet, bilatéral means salt has been applied on both side of the filet) and salting duration (the duration, in hour, between salt is applied and rinse). The files names contain the time in minutes between the beginning of the salting process ad the MRI acquisition. For instance, the file 20220208_Bi_Long_SSStandard_1D_2880min.hdr is the sodiumMRI acquired at 2880 minutes afeter the beginning of the salting process for the filet 20220208_Bi_Long_SSStandard_1D. To open (with the open software ImageJ for instance) MRI the .hdr and the .img files have to be in the same folder. The field of view dimension of the MRI is 19.2*6.4 mm. MRI resolution is 3*2*8 mm. MRI are transversal slice of the filet, the resolution is 2 mm in the salt penetration direction i.e. from one filet side to the other (the smallest dimension on the MRI) and 3mm in the other direction (the largest dimension of the MRI).The virtual slice thickness is 8mm.
