The aim of this study was to acquire microbial information from real-world dry-aged beef and screen microorganisms with the potential to enhance its quality characteristics. To achieve this goal, microbial counts were conducted on the crust and interior of dry-aged beef samples ob-tained from seven commercial companies of China.
