Sauerkraut and fermented cucumbers are the most commonly consumed fermented vegetables in Poland, which is why their quality is of great importance, especially in terms of biogenic amines. In this study, the quality and composition of the bacterial microbiota of locally available samples of fermented cucumbers and sauerkraut were assessed.
