The study involves a microbial characterization of a coffee producing region in Brazil. The analysis with Illuminas 16S and ITS sequencing determined what were the dominant groups of bacteria/archaea and fungi involved during fermentation. The relevance that is achieved through this kind of research involves findings of new cultures to use as starters and improve beverage quality.
