High-pressure processing-induced transcriptome response during recovery of Listeria monocytogenes

To show how Listeria monocytogenes react to high pressure treatment and how they recover after the treatment, we applied 200 MPa and 400 MPa high pressure for 8 minutes to L.monocytogenes strain RO15 and ScottA. After the treatment, RNA-sequencing was performed for 9 different time points (0 min, 5 min, 10 min, 30 min, 45 mn, 60 min, 6 h, 24 h and 48h). We showed that genes related to cobalamin biosynthetic process, divalent inorganic cation transport, transition metal ion transport were significantly upregulated for almost all time points. During the late timepoints genes related to translation, rRNA binding and structural constituent of ribosome were upregulated which indicates that strains recovered.
