A rapid detection campaign targeting pickled vegetables in the circulation sector of farmers' markets in Pingyang County was conducted, with nitrite tests performed on the pickled vegetables. This work provides factual basis for qualification rate evaluation, as well as reference and technical support for government supervision and consumer purchasing decisions. 1. Data Collection: Pickled vegetable samples were randomly selected from farmers' markets across the county to conduct analytical investigations on their nitrite content. 2. Data Detection: Nitrite tests were conducted on the pickled vegetables in accordance with GB 5009.33-2016 National Food Safety Standard for the Determination of Nitrite and Nitrate in Foods, to obtain relevant test data. 3. Data Processing: The test results for nitrite-related non-conforming items were screened out to evaluate the disqualification rate. The disqualification rate of all samples = (number of disqualified samples among all samples) / total number of all samples; The disqualification rate of specific category samples (e.g., disqualification rate of pickled cabbage) = (number of disqualified samples in the specific category) / total number of samples in the specific category. By analyzing the disqualification rate of all samples, we can gain insights into the current status of nitrite levels in pickled vegetables. By analyzing the disqualification rates of different sample categories, commodities with relatively high disqualification rates can be identified, providing data references for consumers' healthy dietary choices, as well as guidance for determining key detection targets in subsequent work.
