Quality protein maize has know health benefits, however it is unknown what effects the proteome rebalancing might have on the human gut microbiome. Four human subjects microbiomes were used in an in vitro screen to test these effects. Demonstration that the quality protein lines do have a beneficial impact on human health mediated by the microbiome introduces a novel "prebiotic" popcorn line that could be introduced to consumers to improve human health through diet.
