Diet-dependent modulatory effects of mycoprotein were assessed using the Simulator of the Human Intestinal Microbial Ecosystem (SHIME) in a Quad-M-SHIME configuration. Microbiota compositional and functional changes associated with strict plant-based or omnivorous diets in healthy adults were characterized using 16S rRNA gene amplicon sequencing and short-chain fatty acid (SCFA) analysis.
