Dataset: Inhibition of Bacillus cereus growth by fermentation of sunflower seed oil press cake for cheese alternatives

This dataset supports the publication on the inhibition of Bacillus cereus in plant-based dairy alternatives made from sunflower seed oil press cake (https://doi.org/10.1016/j.fufo.2026.101017). It includes raw data on Bacillus cereus contamination along the different processing steps, the inhibition of B. cereus growth and sporulation during fermentation, as well as the dynamics of B. cereus counts during storage and ripening, complemented by biochemical measurements. The data enable assessment of microbiological risks and support the development of safe production processes for plant-based dairy alternatives.
