基于规范的食品抽(取)样和实验室检测,依据标准方法处理原始检测数据,获得所检食品样本中铬含量数据,通过比对食品安全国家标准,对样品进行合格性评价,判定食品中污染物铬含量是否达标。该数据可为食品生产主体掌握食品质量状况、规范农业生产、强化原材料采购及质量把控、落实食品产品包装等工艺规范提供科学依据,并可为监管部门开展食品安全监管提供执法证据。1.样品检测:依据相关规范组织抽(取)样及制样,精确称取均质食品试样固体样品0.500g,按照《食品安全国家标准 食品中铬的测定》(GB 5009.123-2014)进行前处理及上机检测,读取样品浓度C(μg/L)数据。2.数据处理:根据计算式计算样品中铬含量检测结果(mg/kg)=(C×V×n)/(m×1000),其中,C(μg/L)为样品浓度,V(mL)为定容体积,n为稀释倍数,m(g)为取样量。3.合格率计算:依据《食品安全国家标准 食品中污染物限量》(GB 2762-2017)对样品进行合格性评价,并计算合格率(%) = (合格样品数量 / 检测样品数量) ×100%。4.数据应用:农业种植户根据农产品中铬含量检测数据,可以指导安全灌溉及施肥,降低农作物污染水平;食品生产主体可根据食品中铬含量检测数据,对照食品安全国家标准,准确了解食品质量状况,进而规范原辅料索证索票及入库检验,选用合格食品包装材料,强化落实生产工艺及产品储运管理等制度规范,确保产品安全;食品监管部门根据检测数据及合格率统计数据可精准开展食品安全监管和风险交流
Based on standardized food sampling and laboratory testing, raw test data are processed via standard methods to obtain chromium content data of the inspected food samples. Conformity assessment is conducted on the samples by comparing with national food safety standards to determine whether the chromium pollutant content in foods meets the specified limits. This dataset can provide scientific basis for food production entities to grasp food quality status, standardize agricultural production, strengthen raw material procurement and quality control, and implement process specifications such as food product packaging, and can also offer law enforcement evidence for regulatory authorities to carry out food safety supervision.
1. Sample Testing: Conduct sampling and sample preparation in accordance with relevant specifications, accurately weigh 0.500 g of homogeneous solid food test sample, perform pretreatment and instrumental analysis in accordance with National Food Safety Standard: Determination of Chromium in Foods (GB 5009.123-2014), and record the sample concentration C (μg/L).
2. Data Processing: The chromium content test result of the sample (mg/kg) is calculated by the formula: (C×V×n)/(m×1000), where C (μg/L) is the sample concentration, V (mL) is the constant volume, n is the dilution factor, and m (g) is the sample weight.
3. Qualification Rate Calculation: Conduct conformity assessment on the samples in accordance with National Food Safety Standard: Limits of Contaminants in Foods (GB 2762-2017), and calculate the qualification rate (%) = (Number of qualified samples / Number of tested samples) × 100%.
4. Data Application: Agricultural growers can guide safe irrigation and fertilization based on the chromium content test data of agricultural products to reduce crop pollution levels; food production entities can accurately understand food quality status by referring to national food safety standards based on the chromium content test data of foods, thereby standardizing the acquisition of certificates and purchase vouchers for raw and auxiliary materials and warehouse inspection, selecting qualified food packaging materials, strengthening the implementation of institutional specifications such as production processes and product storage and transportation management, and ensuring product safety; food regulatory authorities can accurately carry out food safety supervision and risk communication based on the test data and qualification rate statistics.
