The goal is to examine how a set of different starting microbiomes each respond to a panel of starches, including a variety of different resistant starches. This will shed light into differences between individual microbiomes that drive digestion of the various types of resistant starch and fermentation to short chain fatty acids, particularly butyrate. This has important implications of developing personalized dietary recommendations based on the composition of a person's microbiome.
