In this study, the genome of two P. kluyveri strains isolated from Mezcal fermentations was sequenced and compared to the reference genome of P. kluyveri X31-10. The changes in gene expression levels and production yields (Ypx) of the aroma-active compounds at three fermentation times and two different agitation conditions were analyzed using transcriptomics. These analyses allowed us to identify key genes involved in the aroma production of P. kluyveri strains and the differences responsible for the variation in the aroma profile of these strains.
