<p class="MsoNormal"><span lang="EN-US">This dataset contains experimental data (*.xlsx files) for multiple emulsions of the W1/O/W2 type designed as potential delivery systems for colorectal cancer therapy. The emulsions were prepared using a two-step syringe-to-syringe homogenisation technique. </span></p><p class="MsoNormal"><span lang="EN-US">The dataset includes:</span></p> <ol style="margin-top:0cm"><li class="MsoNormal"><span lang="EN-US">Viscosity measurements of the individual phases performed with an Anton Paar RheolabQC rotational rheometer with a DG42 measuring system.</span></li><li class="MsoNormal"><span lang="EN-US">Microscopic observation – initial morphology and stability study for different emulsion variants (E1, E2, and E3 with 0.4 and 0.6% w/w sodium carboxymethyl cellulose (CMC)) over a 30-day period (Olympus BX-60 optical microscope with Olympus SC50 digital camera &#43; Olympus CellSense software).</span></li></ol> <p class="MsoNormal"><span lang="EN-US">All CMC concentrations specified in the data refer exclusively to the external phase.</span></p>
