Spinach leaves - phytonutrient profiles (LC–ESI–QTOF/MS) and enzyme inhibitory properties: dataset

<p>This dataset contains comprehensive chemical and bioactivity profiling of spinach leaves following a two-phase fractional extraction using 15 different solvents to obtain lipophilic and hydrophilic fractions. It includes quantitative results for tocopherols, pigments (xanthophylls, carotenoids, chlorophylls, pheophytins), CIELab color parameters, and antioxidant capacity (ORAC), together with in vitro enzyme inhibition data (AChE, BuChE, 15-LOX, and ACE). In addition, data for phenolic compounds and procyanidin polymers, as well as free amino acid profiles from the residual material after pre-extraction, are provided, supporting the observed antihypertensive and cholinesterase-inhibitory potential of spinach extracts.</p>
