cows from a valley farm were divided during summer in two groups: six cows delivered in transhumance in highland alpine pasture and six cows left in the valley farm. Microbial analyses were performed in order to investigate the microbial evolution of milk before, during, and after summer transhumance, in particular, to compare the milk microbiota of the two groups, and understand whether the alpine pasture could directly influence the milk microbiota.
