TECHNOLOGY OF EXTRACTING OIL FROM WHEAT KERNEL AND ITS APPLICATION IN THE FOOD INDUSTRY

This article analyzes the technology of extracting oil from wheat kernels and its application in the food industry. Wheat kernels are a rich source of biologically active substances, in particular, vitamin E, unsaturated fatty acids and antioxidants. The study considers mechanical pressing and extraction methods for extracting oil from kernels and compares their effectiveness. Also, the quality indicators, storage properties and importance of the obtained oil in enriching food products are highlighted. The article substantiates the technological aspects of using wheat germ oil in the production of health-promoting products. The results show that this product is a promising raw material in the food industry.
