A dataset of Agro-waste processing impact on the Quality and Storage Stability of Smoked Catfish (Clarias gariepinus)

Catfish (Clarias gariepinus) smoked with charcoal, rice shaft and maize cobs were examined with the aim of determining the effect of agrowaste impact on the extent of accumulation of the sixteen US EPA priority polycyclic aromatic hydrocarbons (PAHs). The levels of PAHs in the smoked catfish samples were obtained using gas chromatography with a flame ionization detector after extracting with n-hexane by Soxhlet extraction technique. The result showed detection of all the 16 PAHs in the smoked catfish. The PAHs namely naphthalene, acenaphthylene, acenaphthene, fluorene, phelanthrene, anthracene, fluoranthene, pyrene, benzo (a) anthracene, chrysene, benzo (b) fluoranthene, benzo (k) fluoranthene, benzo (a) pyrene, indeno (1, 2, 3-cd) pyrene, dibenzo (a, h) anthracene and benzo (g, h, i) perylene identified were below critical level. A total of 20 amino acids namely glycine, alanine, serine, proline, valine, threonine, isoleucine, leucine, aspartate, lysine, methionine, glutamate, phenylalanine, histidine, arginine, tyrosine, tryptophan and cystine were identified in the smoked catfish. The proximate composition (moisture, protein, fat, and ash) were within the range of 5.01-7.28%, 61.29-67.25%, 12.03-13.56% and 5.98-6.45% respectively which the mineral (sodium, calcium, magnesium, iron, zinc and potassium) were within the range of 29.28-33.28 mg/100g, 10.02-10.94 mg/100g, 23.01-25.19 mg/100g, 0.82-1.20 mg/100g, 0.30-1.49 mg/100g and 156.32-177.25 mg/100g respectively.
